Almond Extract: Almond Extract will enhance the flavors of the following fruit: Peaches, Nectarines & Cherries. 1/4 – 1/2 tsp. will do it! (The reason being is that all these fruits contain the same or similar enzymes that form the flavor. Look at the pits of Peaches and Nectarines – they look like large almonds!
Baking Powder: To make your own Baking Powder, combine 1/4 tsp. Baking Soda with 1/2 tsp. Cornstarch.
To substitute for Cake Flour: Measure 1 cup All-Purpose Flour; remove 2 Tbsps. and then add 1 Tbsp. Cornstarch.
Scalded Milk: Fresh milk contains enzymes that inhibit the growth of yeast, therefore yeast dough recipes call for scalded milk. An easy replacement for scalded is the use of Instant Dry Milk. For every cup of scalded milk, combine 1/3 cup of dry milk with one cup of water.
To make Sour Milk: squeeze half a lemon into a 1 cup measure; add milk to equal one cup; mix and let stand for 5 – 10 minutes until the milk curdles. Buttermilk may be used in place of sour milk.
