2 cups fresh Corn Kernels* (about 4 ears)

½ cup each diced Red & Green Bell Peppers

½ cup chopped Cabbage

Corn Relish

½ cup chopped Onion

¼ cup chopped Celery

¾ cup Cider Vinegar

1 cup Sugar

½ tsp. Celery Seed

¾ tsp. dry Mustard

¼ tsp. Turmeric

¾ tsp. Sea Salt


  1. Combine the Corn with the other Vegetables in a medium-size bowl.
  2. Combine the remaining ingredients in a medium-size saucepan and bring to a boil over high heat.
  3. Add the Vegetables to the boiling liquid and reduce the heat to low; continue   cooking and stirring occasionally  for  20  minutes.
  4. Remove from the heat and cool; transfer to a small bowl or covered   container and refrigerate until ready to use.  Serve with any kind of meat.

Yield:  Approx. 3 cups
